Add 1 teaspoon per cup. Don’t overheat the water. Steep leaves at 80-85ºC (not boiling) for around 20 seconds then remove leaves for a smooth sweeter flavour.  Longer steeping (up to 90 seconds) will bring out Sencha’s lingering bitterness and intensify the flavour. It’s down to personal taste. Use a Japanese kyusu teapot for best results.
